Pineapple Kugel Recipe

I can’t believe that Passover is here already.  Seems like I just cleaned out my cupboards, took out my special dishes and put them away yesterday.  Time goes by so much faster as I age.  Why is that?  Hmm, something to ponder at a later date.  Anyway, one of my favorite things to do is share recipes.  This is one recipe that I was fortunate to get from an amazing woman who has inspired me and helped make my Passover dinner really great!  Thank you, Emuna Braverman!  Chag Pesach Semach.  I hope you all enjoy this kugel as much I do and will!

Pineapple Kugel Recipe:

4 eggs
½ cup oil
½ cup sugar
¼ cup potato starch
1 teaspoon vanilla
1 (20 ounce) can crushed pineapple, drained

Preheat oven to 350 degrees. Mix all ingredients together well. Pour into a 9-inch round or square pan and bake until golden – about 45 minutes. This is best hot but also good at room temperature.

According to Emuna, she has even caught some people eating the kugel straight out of the refrigerator
